I shared those cookies I made the other day on my Instagram stories (@evawadl) and so many of you sent me a dm asking for the recipe. It was just a first try back then, I basically made it with leftover caramel sauce. But I perfected the recipe and want to share it with you guys! So here we go!
4 Medjool Dates (soaked and pitted)
4 Tbsp. Water (warm)
1 Tbsp. Coconut Oil
1/2 Tbsp. Vanilla
3 Tbsp. Maple Syrup
1/2 Tsp. Salt
3 Tbsp. Apple Sauce (cook & blend one apple)
1 1/2 Cups Oats
Bake 20 minutes at 160 °C (320 °F)
1 Step: Preheat the oven. Add all ingredients for the caramel sauce (dates, water, vanilla, salt, maple syrup, coconut oil) in a blender and blend until smooth.
2 Step: Put the oats in a bowl and add the caramel sauce as well as the apple sauce. Combine everything with a spoon and mix well.
3 Step: Take a scoop of 1 tablespoon from the batter and form a ball. Put the ball onto a backing tray and press down lightly to get a flat shape. Repeat this process. You should be able to get 8 cookies this way.
4 Step: Put the cookies in the preheated oven for about 20 minutes. They should be golden brown on the outside and soft on the inside.
5 Step: Let the cookies cool down and top with peanut butter, nuts and cacao nips or dairy free chocolate.
